Lemon Blueberry Mousse

  • Ingredients

  • 1 ½ cup low fat Greek vanilla yogurt

    1 ½ cup low fat whipped cream

    1/3 cup EQUAL Spoonful or 8 EQUAL sachets

    1 Tbsp finely grated lemon peel

    1 ½ cup fresh blueberries

    Fresh mint sprigs, optional

Instructions

  1. Combine yogurt, whipped cream, Equal and lemon peel. Fold in blueberries.
  2. Refrigerate 1 to 2 hours or until well chilled. Garnish each serving with a mint sprig, if desired.
