SUBMIT A RECIPE
1.Preheat oven to 160C (320oF). Line 2 baking trays with baking paper. Combine the Equal, canola spread and egg in a bowl and beat with an electric mixer until combined.
2.Stir in the dried apricots, sultanas, oats and self-raising flours.
3.Roll level tablespoons of mixture into balls, place on the baking trays and flatten with a fork. Bake for 15 minutes or until lightly browned. Transfer to a wire rack to cool. Store in an airtight container.
4.Suggestions: For a hint of chocolate, add ¼ cup choc-chips with the dried apricots and sultanas.
