250g broccolini, cut into small pieces
200g sugar snap peas
1 cup mung bean sprouts
3 cups bean sprouts
1 red capsicum, seeded, finely sliced
½ Spanish onion, finely sliced
1 avocado, peeled, seeded, sliced
80g baby spinach
½ cup torn fresh mint
½ cup torn fresh coriander
DRESSING
2 tbs fish sauce
2 tbs lime juice
2 tbs sweet chilli sauce
2 tsp EQUAL SPOON FOR SPOON
2 tsp finely grated ginger
Instructions
1.Add broccolini to a saucepan of boiling water and cook for 1 minute or until tender, drain, rinse under cold water.
2.Combine broccolini in a large bowl with the snap peas, mung bean sprouts, bean sprouts, capsicum, onion, avocado, spinach, mint and coriander.
3.To make the dressing, combine all the dressing ingredients in a cup.
4.Add the dressing to the salad ingredients and toss lightly to combine. Serve immediately.
.Hint: Serve this salad on its own for a light meal or add some sliced grilled chicken or flaked salmon or tuna (fresh or canned).
The dressing can also be served as a dipping sauce for rice paper rolls, fish cakes and spring rolls.
